A low-FODMAP diet can be a good place to start for those with irritable intestinal syndrome. These foods contain low amounts of materials which the intestines have difficulty breaking down. In general, legumes contain high levels of FODMAPs, and are therefore not an important part of the diet for people with irritable Bowel Syndrome. When lentils are canned they become low-FODMAP foods.
Low-FODMAP dieters can consume up to half a cup of lentils in a can and quarter cup of chickpeas in a can each day. It’s all about the water-solubility of FODMAP ingredients. The FODMAP components are dissolved in the liquid when these foods are canned. Before eating, the food is washed with water to remove most of its FODMAPs. The canned legumes are best for patients with IBS. Roasting canned chickpeas in extra-virgin oil and salt at 400 degrees Fahrenheit is a great way to get started.
