Gluten is a natural protein found in grains such as barley, wheat, rye and spelt. Gluten causes flours to form a sticky, glue-like substance when they are mixed with water. Gluten is generally safe for most people to eat, but some may be allergic or sensitive. Gluten-sensitive or gluten-allergic individuals can exhibit symptoms associated with an enhanced immune response. It may be regarded as an invader by their body.

Increased immune response can cause all organs to go into overdrive. This includes the mucous tissues that line the nasal passages, the oral cavity and other digestive systems. An abnormal flood of histamine, along with other inflammatory chemicals, can cause nasal passages that are swollen and inflamed when an individual consumes wheat gluten. These swellings and irritations, combined with polyps in the nasal passages, can block sinuses. The nasal congestion and pain are the result.
